Production Catering

Prices are as follows for production catering:


  • $27 per person for breakfast and lunch
  • $30 per person for events under 30ppl
  • $500 Truck fee per day

Other charges may apply depending on size of commercial or movie.


Breakfast includes a 6 item hot breakfast; plus fresh items such as burritos, fried eggs, egg whites, etc.  which are made fresh on the truck. Hot coffee, juices, danish, muffins and fresh fruit, hot and cold cereals, milks and cream.


Lunch includes a 3 entree hot lunch one being vegetarian. One starch, veggies, soup or salad, 3 different desserts, iced tea, homemade sweet tea, and lemonade.

Please note, this is just a sample of the items that I can make; if there are any special request or dietary needs please ask, I am sure I can make it or figure out how to make it.

Chicken Selections


  • Lemon Chicken - Grilled chicken breast basted in lemon , lime salsa
  • Buffalo Chicken - Breaded breast tossed in a spicy buffalo sauce topped with fresh blue cheese
  • Thai Chicken - Sautéed chicken breast with thai veggies and a red curry and coconut milk sauce
  • Chicken Fajitas - Grilled breast strips with peppers , onions and fresh cilantro. Served with flour tortillas and traditional fajita toppings
  • BBQ Chicken - Bone in breast marinated in apple juice then grilled with our homemade bbq sauce
  • Blackened Chicken - Breast of chicken rubbed with our secret spice and seared over high heat. Topped with gorgonzola cheese
  • Chicken Parm de Chef - Baked chicken stuffed with fresh parmesan, spinach, basil. Topped with a white wine sauce
  • Doritos Chicken - Chicken breaded in our Dorito breading flash fried and finished in the oven. Finished with a light avocado aioli
  • Chicken Bianco - Chicken sautéed in white wine, garlic and artichokes. Finished with shredded asiago cheese
  • Chicken Parmesan - Lightly breaded chicken breast with parmesan and bread crumbs that has been pounded. Topped with fresh marinara and mozzarella.
  • Chicken Tuscan - Chicken breast wrapped in prochito ham, baked and topped with a truffle mustard cream.
  • Chicken And Dumplings - Simmered whole chicken with carrots, onions, peas, celery, and homemade drop dumplings
  • Chicken Pot Pie - Stewed chicken and veggies baked into a fresh pie.

Beef Selection


  • Marks Chuck - Slow roasted chuck roast in a bone broth, red wine and garlic
  • Blackened Steak - Chefs selection of steak rubbed in secret spice and seared on high heat.
  • Jumbo Meatballs - A blend of beef and pork with various spices and parmesan , egg , bread crumbs.  Slow cook in a tomato sauce.
  • Coca Cola Flank Steak - Flank steak marinated in a chefs Coka Cola recipe.Then grilled med rare and sliced London broil style.
  • Beef Fajitas - Grilled beef strips with onions and peppers, served with flour tortillas and traditional fajita toppings.
  • Beef Tenderloin - Grilled tenderloin steaks with a secret basting oil.  Seven with bernaise or peppercorn sauce. Add $4 per person
  • Beef Short Ribs - Slows roasted beef short ribs in a Jack Daniels glaze.
  • Corned Beef - Simmered corn beef brisket sliced and served over a bed of cabbage.
  • The Loaf - Meatloaf with a special blend of meats and spices, stuffed with smoked guada, wrapped in bacon and slow roasted.  Seven in a light sherry gravy

Pork Selections


  • Apple Ribs - Marinated baby back ribs in a apple juice blend, then slow roasted and grilled with a spicy asian BBQ sauce.
  • PR Pulled Pork - Pork basted in coconut oil and secret spices, slow roasted and pulled to perfection
  • Tenderloin of Pork - Pork tenderloin steaks wrapped in bacon and grilled rare then finished in the oven. Topped with a truffle hollandaise.
  • Pork Steak - Pork loin steaks stuffed with smoked guada , grilled and baked, served in its own au jous.

Seafood Selection


  • Marks Shrimp Rockefeller - Jumbo shrimp baked with fresh parmesan, bacon and spinach.
  • Shrimp Scampi - Jumbo shrimp sautéed in a garlic butter sauce
  • Jumbo Hamilton Shrimp - Marinated jumbo shrimp and lightly breaded, fried and served with a wasabi cocktail sauce.
  • Thai Shrimp - Shrimp sautéed in a sweet red curry and coconut sauce with Thai veggies
  • Fish Sticks - Marinated Mahi Mahi cut into strips and fried served with homemade cajun tartar
  • Blackened Fish of the Day - Chefs choice of freshest fish, rolled in secret spice and seared over high heat
  • Ahi Tuna - Tuna marinated , rubbed in a sesame seasoning, seared rare and sliced thin.  Can be served in fresh tacos with a wasabi seaweed slaw, or seven on a bed of seaweed slaw
  • Honey Seracha Salmon -  Salmon grilled to medium basted with a honey  seracha
  • Salmon Cakes - Fresh salmon with bread crumbs and cilantro rolled into cakes and lightly fried
  • Famous Crab Cakes - Lump crab cakes made with Hawaiian  bread rolled into cakes and lightly fried. Served with a search aioli
  • Scampi Clams - Little necks sautéed in a scampi sauce
  • Beer Battered Cod - Fresh cod rolled in dark beer batter and slow fried served with our famous tartar sauce

Lamb and Veal


  • Lamb Stew - Chunks of leg of lamb stewed with fresh veggies and white wine
  • Osso Bucco - Simmered Veal shank in a tomato gravy with fresh veggies. Add $4 per person
  • Lamb Racks - Crusted lamb racks rolled in a mixed nut crust, served with a port wine sauce. add $5 per person.
  • Oh Duck - Duck breast fried crisp then sautéed in a sweet curry pepper sauce. add $4 per person

Vegetarian Sections


  • Grilled Portabella Steaks - Portabella steaks marinated in our Coca Cola marinade and grilled
  • Tofu Tempora - Tempora fried tofu topped with a drizzle of Teriyaki Sauce
  • Grilled Tofu - Tofu Steaks grilled with a wasabi basting sauce
  • Baked Egg Plant - Eggplant baked in a parmesan and onion vinaigrette
  • PR Garbanzos - Stewed garbanzos in with onions and peppers, garlic and cilantro
  • Stuffed Bell Peppers - Stuffed bell peppers with a veggie mash potato stuffing
  • Spinach Raviolis - Spinach raviolis sautéed in a light white wine cream sauce.
  • Grilled Zucchini Steaks - Zucchini steaks marinated in a soy marinade and grilled
  • Black Beans - Simmered black beans with a fresh cilantro salsa
  • Veggie Pot Pies - Baked stew veggies in a pie

Starch Selections


  • Garlic New Potatoes, Chive Mashed Potatoes, Smoked guada mashed potatoes, Scallop Potatoes, Au Gratin Potatoes, Roasted New Potatoes, Baked potato bar, sweet potato bar, fried sweet potatoes, yellow rice, wild rice, brown rice, basmati rice, jasmin rice, Angel hair pasta, baked ziti, Parmesan cos cos, herbed orzo, jalapeño mac and cheese

Vegetable Selection


  • Asparagus, sweet pease, sugar snap peas, broccoli, green beans almandine, home style green beans, mixed veggies, steamed cauliflower, zucchini and squash, stir fried veggies, grilled veggies, caramelized carrots, cheesy corn, sautéed spinach, collard greens, sautéed cabbage, sautéed brussel sprouts, smashed brussle sprouts
